This is a pretty easy recipe- and very yummy!!!

Ingredients:
2 tbsp olive oil
2 cloves garlic, crushed
6 boneless skinless chicken breasts (I used 5, but they were huge!)
2 cups marinara sauce
8 oz mozzarella, shredded
4 oz Parmesan, grated
1 (5-oz) package garlic croutons

1 chopped onion
several red potatoes
Directions:
1. spread the olive oil and garlic on the bottom of a casserole dish. (you can also throw in some red pepper flakes or something like that...)
1.5. the recipe I found did not call for onions or potatoes, but I added them anyway. I chopped up almost a whole onion and put that with the garlic on the bottom of the dish. Then I chopped up some red potatoes and put them on top of the olive oil/garlic/onion mixture. I used enough potatoes to fill the dish- depends on how much of a presence you want in the dish...
2. Put chicken breasts on- I used 6, just put enough to fill the dish
3. spread tomato sauce over the chicken (I used pasta sauce)
4. put half of cheese over the sauce
5. spread the croutons all over the top of it.
6. put the rest of the cheese on top
7. bake in the oven at 350 for 35 minutes (I actually had mine in the oven for about 45, I cut into the chicken to make sure it was done before pulling it out... make sure the chicken gets cooked all the way)
